Recipe:
Muddle 1-2 pieces Strawberry
1.5 oz Shāng
0.75 oz Lychee liqueur 
0.75 oz Almond Orgeat
0.25 oz Gum syrup
0.75 oz Fresh lemon juice 

Garnish:
Dry pineapple 

Glassware:
Rock glass 

Method of Preparation:
Pour all ingredients into a cocktail shaker, hard shake about 10 sec. Then double strain into rock glass with regular ice and garnish with Dry pineapple.

Rooted in tradition, this cocktail is inspired by Si Wa Wa, the vibrant vegetable spring roll of Guizhou. Reimagined as a modern Chinese Mai Tai, it incorporates strawberry to accentuate the fruity and aromatic qualities of xiang jiu. This creation bridges heritage and innovation, celebrating the freshness of local ingredients while showcasing the spirit’s depth and versatility.
